In recent years, Baron has excelled at Southwold tastings and from barrel tastings, with critics and merchants alike heaping praise on the wines – this is an estate at the very top of their game. Stylistically, Baron appears to be less classical and more opulent than neighbour Pichon Lalande, however, in bottle the wines adopt a more orthodox Pauillac character. Jean-Rene Matrigon chooses to vinify plot by plot using small fermentation vats and wines are typically aged in 80% new oak barrels. Of the 73 hectares of vines, 65% are planted with Cabernet Sauvignon and 35% with Merlot. The Tourelles is predominantly Merlot from the Sainte Anne vineyard and offers a juicy, approachable style of Pauillac that is delightful after just a year or two in bottle, but will also reward those with patience. The bouquet is deep, pure and very, very promising, albeit still a tad on the young side, as it delivers a refined aromatic constellation of black cherries. Easily 94 pts today but my guess is, once this is fully mature with lots more tertiary. Very high precision, a touch of sexiness to balance that masculinity. After some lacklustre wines in the 70s and 80s, AXA bought the property in 1987 and enlisted the help of Jean-Michel Cazes have rebuilt the Chateau’s reputation. AXA Millésimes, the current owner has overseen the resurgence of this venerable estate. These two formidable structures on opposite sides of the D2 are two of the most iconic building of the Medoc and two of the most iconic wines. Chteau Mouton Baronne Philippe, Pauillac 1982. Thirty years old and still holding up, at this age there is more bottle variation but we were lucky, the wine still had enough fruit and structure to be very enjoyable, one of the wines of the evening. The wine is transferred into oak barrels for aging after finishing its malolactic fermentation. Grapes are harvested and sorted by hand, and then macerated for 20-30 days, and fermented at 28-32 ☌ in temperature controlled stainless steel vats of varying sizes. The vineyard is situated at the southern end of the commune of Pauillac near border with the Saint-Julien-Beychevelle appellation. The yield is typically less than 40 hectoliter per hectare. The planting density is 9 000 vines per hectare using a double Guyot training and the average age of the vines is 30 years.
